Fall Festival Week - Favorite Recipes

I thought I'd share my mom's pumpkin bar recipe with you. My mom took the time a few years ago to write out some of our family's favorite recipes in her own handwriting. I will treasure them forever.

Mix together:
2 cups flour
2 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 tsp baking soda
2 cups sugar

In a separate bowl, mix together:
4 eggs
2 cups canned pumpkin
1 cup oil

Make a "well" in the dry ingredients and add the pumpkin mixture. Mix all together well.Spread into a jellyroll pan and bake at 350 for 25 minutes.

Frosting:
3 oz. pkg cream cheese
3/4 stick butter
1 Tbs milk
1 Tbs vanilla
1 3/4 cups powdered sugar


I found this cookie recipe in the October issue of Midwest Living. I baked them last night and a dozen or more have already mysteriously disappeared.

3/4 cup butter, softened
1 cup packed brown sugar
2 eggs
1 tsp. baking powder
1/4 tsp baking soda
1 1/2 tsp finely shredded orange peal
1/2 cup sour cream
1 tsp vanilla
1 3/4 cups flour
2 cups quick oatmeal
1 cup semi-sweet chocolate chips
1/2 flaked or shredded coconut

Cream butter and brown sugar. Add eggs and beat well. Add remaining ingredients in order listed, folding in the oatmeal, chocolate chips and coconut with a spoon. Drop by rounded teaspoons onto cookie sheets and bake at 350 for 11-12 minutes. Makes about 3 dozen cookies.

Jill, these sound so yummy! I don't know if you scrapbook or not...but one of my favorite ideas is to copy the recipe in the family member's hand, then show photos of us cooking that recipe in our Kitchen. I treasure these pages so much and having the recipe in my albums is an added bonus.

I love pumpkin bars!! My Mom makes some similar and they are DELICIOUS!!!

Also...I had to comment on your comment on my post today...LOL...If you need a college team to cheer for, definitely do it for Alabama. We are full of tradition and fun and we play some great games!! And we may need a few extra cheers tomorrow!
